Does Water Eject collect my data or record audio?

No. Water Eject runs entirely on device with no account and no sign-up, and its input-level meter uses the microphone only while that meter is open. Audio is processed live on your iPhone for the level reading and is never recorded, saved, or sent anywhere. The free version does show ads through Google AdMob.
